Wheel shows in Win10 but I can't get the wheel to work in games

Hi all - I'm hoping someone can offer advice because I can't get my wheel/pedals (Fanatec Porsche 911 GT3 RS v2 with matching pedals) to work in racing games. I've supplied a video link at the bottom to show you what's happening (watch to the end where I go into the properties in Windows).
Windows sees the wheel & pedals in the Game Controllers properties but it doesn't appear to get passed through to the game. Can anyone help please?
SOME POINTS WORTH NOTING;
- Windows 10 is fully up to date.
- Fanatec drivers are the current version (261).
- Wheel firmware to the current version (756).
- I've tried launching Steam in "Big Picture Mode"
- I have ensured "Generic Gamepad Configuration Support" in Steam is off.
- Steam is up to date, games are up to date.
- I've verified the game files under Steam.
I've tried Assetto Corsa and Project Cars 2 but the same happens - the games don't 'see' the wheel/pedals.
